Head cooks at biryani and wedding caterers
Dum cooking in bulk and early preparation mean the cooling and holding time before service is the main control.
Thalassery, a short way south of Kannur city on the road to Kozhikode, gives the district much of its food reputation. Its biryani uses kaima, a short-grained aromatic rice, and is cooked by the dum method, with the raw chicken added to the masala without oil. It is a wedding favourite, and a wedding order means a very large vessel. Wikipedia credits the town with Kerala's first bakery, started in 1880, with Western-style cakes arriving in 1883. Local sweets and snacks lean on eggs, coconut and sugar: unnakkai, muttamala, chatti pathiri. Each of them becomes a handling question once the batch is made ahead.
The sea adds another. The Asian green mussel, called kallummakkaya locally, grows on rocks in the Arabian Sea and is a favoured Thalassery dish, whether fried, stuffed with rice or pickled. Shellfish cause trouble when stored warm or kept beside cooked items, so a restaurant serving them needs a firm raw and cooked divide.
Then comes the season of the gods. Travel guides place the Theyyam season roughly between October and May, with some performances such as Muthappan at Parassinikkadavu described as running through the year, and fish and other offerings are part of the temple's practice. These come from travel and folklore pages, so confirm schedules locally. The practical point for a kitchen is that temple and festival catering in Kannur district can mean cooking for a crowd for several nights in a row, often with committee volunteers.
Kannur International Airport at Mattanur, about 26 km from the city, opened on 9 December 2018, and its first flight was an Air India Express service to Abu Dhabi. It serves a large Gulf diaspora, and travel guides list cafés and restaurants in the terminal. We found no public information on a flight kitchen based there, so we say nothing about airline catering. If you work in or supply a terminal outlet, your concession and licence terms decide what training is expected.
Enforcement is visible. In January 2023, the Kannur Corporation's food safety wing worked in seven squads and seized stale food from 58 hotels in the city, mostly chicken dishes. Kerala has also required food-service staff to hold a health card since early 2023, a medical check that is separate from any training. Training in holding, cooling and cleaning fills the gap between the licence and the plate.

Dum cooking in bulk and early preparation mean the cooling and holding time before service is the main control.
Egg-based sweets, cream cakes and fillings need clear time and temperature rules, and nut allergens need separate tools.
Inspection squads look at stale stock, labelling and storage, and these are daily habits, not one-off tasks.
Mussels, clams and fish need cold storage and separation from cooked dishes, and that discipline has to be shared across the whole team.
Volunteers cook for crowds over several nights and can turn over quickly. A short common briefing sets the rules for everyone.
Travellers eat at odd hours, so cooked food can sit too long on counters. Cooling and hot holding need agreed limits.
Send cooks, helpers and servers to Food Safety for Catering. Send the manager of a bakery unit, a central kitchen or a larger caterer, who has to write down the hazard plan, to HACCP as well. Take First Aid for a team that deals with scalds and cuts, and Fire Extinguisher training where LPG and deep fryers sit side by side. FSSAI's own supervisor scheme, FoSTaC, is separate and delivered by FSSAI-authorised providers. Our certificate does not replace it, so read your licence conditions first.
A bakery or central-kitchen manager who has to document hazards and control points for customers or inspectors.
Kitchens where burns, cuts and heat collapses are likely, especially at festival and wedding peaks.
Kitchens with LPG, fryers and large vessels, where staff should know which extinguisher to use.
Crews that lift large vessels and rice sacks onto vehicles for outdoor events.
Teaching mixes classroom sessions, demonstrations and case studies, and a written paper, a practical demonstration and oral questions make up the assessment. Here is how the modules read for Kannur's weddings, bakeries and temple kitchens.
Why people fall ill from food and what rules a food business must meet. For a caterer sending out hundreds of portions, it shows how a single weak step reaches every plate.
Hazard control built on HACCP ideas: watch the critical points, fix what drifts, keep a record. A dum biryani fits it well, from cooking to holding, transport, serving and discarding, each step with a noted time.
Washing hands, wearing the right clothing and stepping back from work when unwell. It matters most for volunteers and seasonal helpers who change from one festival to the next.
Which cleaning products and disinfection methods suit which surface, and how to separate waste. Bakery trays, big vessels and shellfish shells each need their own routine.
Germs, chemicals and foreign objects as sources of contamination, with allergens treated separately. Raw mussels and eggs beside ready-to-eat sweets are the cases we rehearse.
The temperature range in which bacteria multiply, and how to cook, cool and reheat safely with a probe thermometer. Rice and meat cooked early for a function are where habits change most.
Buyers include wedding and function caterers, hotel and restaurant owners, bakery and sweet-shop managers, temple and festival committees, and outlet operators near the airport. Few can close a kitchen for a day, so teams go in two groups.
| Course | Requirement note |
|---|---|
| Food Safety for Catering Training | A baseline for every cook, steward and server, with a dated record. |
| HACCP Hazard Analysis and Critical Control Points Training | For the person who keeps the written hazard plan. |
| Basic First Aid Training | For kitchens and venues where staff treat minor injuries first. |
Operators and clients set their own requirements; confirm with your contract or HSE department.
Plan your visit around the course reporting time, including any same-day journey.
Kannur is about 282 km from the campus by road, so plan an overnight stay. The Vande Bharat reaches Ernakulam Junction before lunch, and a late return train gets you home the same night.
A third-party timetable lists 20631 leaving Kannur at 07:57 and reaching Ernakulam Junction at 11:40, about 3 hours 43 minutes. Check NTES for running days. From the Junction the campus is about 15 km across the Goshree bridges.
The same source lists 20632 leaving Ernakulam Junction at 18:45 and reaching Kannur at 22:38. A morning batch on day two lets you take this train home.
The road distance is about 282 km, a full day's drive in practice. Rail is the easier choice for most groups.
List cooks, helpers, stewards and anyone who plates or packs. Decide whether HACCP or First Aid should follow Food Safety.
Read the licence conditions and any venue, airport or customer clause about training, and note whether FoSTaC is also asked for.
Write to info@imostacademy.in or WhatsApp +91 8075 787307 with the headcount, the month and the fact that you are travelling from Kannur.
Take the 07:57 train, arrive at Ernakulam Junction about 11:40 and settle near the campus for the night.
Attend the half-day session with photo ID and comfortable clothing, then take the 18:45 train home. Back in the kitchen, put up a cooling and holding chart and diarise the two-year renewal.
