Canteen contractors and cooks serving mill and factory shifts
A single batch of rice or sambar served to several hundred workers means one cooling lapse reaches the whole shift.
The scale of the district's food trade explains the demand. In June 2018 the designated food safety officer told a Coimbatore newspaper that the district had about 29,000 food business operators, that registrations under the food safety law had risen from under 6,000 to 17,000 in eight months, and that the department had brought home bakers and home-based caterers under the licensing net. She put compliance at around 60 per cent, higher for businesses with a turnover above ₹12 lakh, and about 50 per cent in Valparai, where estates and homestays serve food. Those figures are eight years old, but they show who is in the market: many small kitchens with a few staff and little formal training.
Then there are kitchens that are not businesses in the usual sense. The Factories Act, 1948 lets a state government require a canteen in any factory where more than 250 workers are ordinarily employed, and the rules can cover the food served and a managing committee. Textile and engineering units of that size feed one shift in a single sitting. Hospitals do the same around the clock: the Government Medical College and ESI Hospital is listed at 510 beds, and a hospital of that size runs meals for patients, staff and visitors every day. College hostels add another layer, in a city that draws students from Tamil Nadu, Kerala and Karnataka.
FSSAI runs a voluntary scheme called Eat Right Campus for places such as colleges, workplaces and hospitals. A campus trains its food handlers and supervisors, then a third-party auditor rates it. Institutions that want that rating, or simply a clean inspection, need staff who share a baseline. That is the gap a half-day course can fill.
We should be plain about what our certificate is. It is an iMost certificate, not FSSAI's FoSTaC. FSSAI says its food safety supervisor must hold a valid FoSTaC certificate issued by the authority, and that the supervisor must train other handlers on site at least quarterly and keep records. So your nominated supervisor still needs the FoSTaC route. This course is for the rest of the team: a supervisor's quarterly on-site training works better when everyone has already been taught the basics. Check your own licence for what it asks.
About 29,000 operators, with 17,000 registered by June 2018, according to the food safety officer quoted by the Times of India.
Compliance was put at around 50 per cent in 2018 because of terrain and the number of small, scattered kitchens.
Section 46 allows state rules requiring a canteen where more than 250 workers are employed.
Listed at 510 beds, with patient, staff and visitor meals to serve every day.
Voluntary audit scheme for campuses including colleges, workplaces and hospitals, built on staff training.

Line cooks, stewards and cleaners handle ready-to-eat food, and the weakest link decides what an inspector finds.
Cream, egg and filling products need strict temperature control, and flour dust, allergens and shared equipment add risk.
They feed people who are ill, young or elderly, who are more vulnerable to foodborne illness.
Since the district began licensing home-based caterers, the owner is often the cook, supervisor and cleaner in one.
Choose by the job. For cooks, servers and cleaners who handle food every day, the half-day Food Safety for Catering course covers habits: hands, cleaning, cross-contamination and temperatures. HACCP is a management system for people who write and monitor controls, so a bakery or snack manufacturer building a plan wants that instead of, or on top of, this course. FSSAI's FoSTaC is the route for the certified supervisor your licence may require, and we do not offer it. Many Coimbatore kitchens will end up with one FoSTaC-trained supervisor and a trained team behind them.
You run a bakery or snack unit and need to document critical control points, not just train handlers. Ask our team for the fee.
Kitchens see burns, cuts and choking. Half a day, ₹10,000, iMost certificate.
Cooking oil and gas fires start in kitchens. Half a day, with the fee on request.
Teaching mixes classroom sessions with demonstrations, case studies and scenario work. You sit a written test, give a demonstration and answer oral questions, and an iMost certificate valid for two years follows.
Foodborne illness, contamination, pathogens and the duties the food safety law places on operators. For a home caterer who has just taken a licence, this explains what the licence conditions actually expect.
HACCP-based thinking, monitoring critical control points, corrective action and records. A canteen contractor learns what to write down each shift so the paperwork matches the practice.
Handwashing, protective clothing and what to do when a handler is ill. It is the module that changes behaviour fastest in busy hotel and hostel kitchens.
Choosing cleaning agents, disinfecting surfaces and segregating waste. Bakeries and hospital kitchens gain most, because equipment is shared between products or patient diets.
Microbiological, chemical and physical hazards, cross-contamination and allergens. This is where raw and cooked storage, colour-coded boards and allergen labelling are discussed.
The danger zone, thawing, cooking, cooling and reheating, and using a probe thermometer. Large-batch cooling in an institutional kitchen is the topic that most often surprises experienced cooks.
Buyers here include canteen contractors for factories and campuses, hospital dietary managers, hotel HR and training heads, and bakery owners. Kitchens cannot close for a day, so the practical question is how to release people in two or three batches.
| Course | Requirement note |

| Basic First Aid Training | Often added for kitchen supervisors, since burns and cuts are routine. |
| Fire Extinguisher Training | Cooking-oil and gas fires are a kitchen risk; the fee is available on request. |
Operators and clients set their own requirements; confirm with your contract or HSE department.
Kochi is about 190 km from Coimbatore by road. A half-day course can be a one-night trip: travel the day before, attend the batch and head home the same afternoon.
Listed to leave Coimbatore Junction at 10:15 and reach Ernakulam Junction at 13:50, daily except Wednesday. It leaves the afternoon free to rest near the campus.
Listed to leave Ernakulam Junction at 14:20 and reach Coimbatore at 17:17. It works only if our team confirms that your batch finishes with time to spare.
About three hours each way. A hotel or canteen team can leave early, attend the batch and be home after dark. Check timings with our team first.
The Kerala SF Express (12625) is listed from Ernakulam Town at 16:10, reaching Coimbatore at 20:50. Confirm all timings on the railway enquiry service.
Decide who goes first. Ask our team for dates and for the current fee in writing before you commit.
Each person needs a valid photo ID. Note whether anyone is unwell, and tell the instructor about any medical condition or medication.
Take the late-morning train or a van and rest near the campus. Ask our team for suggestions on where to stay.
Dress comfortably for the demonstrations. The assessment has a written paper, a practical demonstration and oral questions.
Share what you learnt with the team on your next shift, and file the iMost certificates with a note of the two-year expiry.
